Cabernet Sauvignon on traditional Veronese pergola of artisanal vine.

Altitude

500 meters above sea level, on a land of very ancient disintegrating lavas in a cru parcel of 0.5 hectares.

Age of the vineyard

1994, when the protection consortium suggested the planting of an international vine.

Soil type

Basalt of volcanic origin, soil very rich in minerals, terraced on ancient dry stone walls of more than 200 years (called "marogne" in Veneto) facing south planted with a density of 5290 vines per hectare.

Harvest

from mid-October to the end of November with 6 kg wooden trays. Manual harvest with selection of the grapes.

Pressing and Maceration

Destamination and pressing with soft manual peel breaking. Slow maceration.

Fermentation

Slow natural fermentation with indigenous natural yeasts

Vinification

Temperature-controlled (10-26 ° C) fermentation in cherry wood vats and soft peel break, with delestage every 20 days. Natural malolactic fermentation.

Refinement

French oak tonneaux 500 lt. for 7 years, 2 years in the bottle in an underground cellar.

Bottling

4000 bottles in all per year, numbered from 1/4000. Capacity 750 ml. The glass called the “Borgognotta” bottle has a significant weight (750 gr.) In order to best preserve the wine from thermal and light shocks. Suitable for long aging wine.

Plug

The cork is made of Italian cork from the cork oak forests in Sardinia (from the Latin suber, similar to the Greek syphar, wrinkled leather, natural insulating material par excellence, which has always been used for capping jars and containers for drinks and food, ointments and perfumes, to isolate the walls and roofs of the domus, and also as containers for serving dishes to diners). Length of the cap: 45 mm.

Aroma

Hints of blackberry, very pleasant balsamic, almost refreshing menthol, undergrowth, white pepper (given by the Molinara grape) both on the nose and on the palate. Bouquet of rose hips, slightly withered violets.

Caramel, toasting and vanilla (given by aging in French oak barrels).

Taste

The aromatic complexity is confirmed by the long palate with incisive notes of spiciness and acidity given by the minerality of the cru and by the altitude. On the palate it is enveloping, the alcohol content alternates with the tasty freshness and the pleasant sapidity. The tannin is well present and gently dries the mouth.

Typical combinations

Thanks to its elegant and fine structure it goes very well with pasta and game first courses, both elaborate red meats, such as stews or braised meats, and white, with fresh and aged cheeses, blue cheeses, of both cow, goat and sheep origin, but also as an accompaniment to sweet flavors such as sweet and bitter chocolate.

Aging

The wine will keep its characteristics for 9-12 years kept at a constant temperature from 14 ° to 16 ° and not exposed to light sources
